Ingredients: Servings 4-6
1 cup, Sweet Onion, Roughly Chopped
1/2 cup, Tomatoes, Roughly Chopped
1 piece, Thai Red / Green Chilli
1/2 inch Ginger, 6 cloves of Garic
2 tbsp, Tomato Ketchup
2 tbsp, Soy Sauce
2 tbsp, White Vinegar
1/4 tsp, Black Pepper Powder
Handful of Cilantro
2 tsp, Cooking Oil
1/2 cup, Spring Onion, Whites, Chopped
1/2 cup, Green Peppers, Chopped
1/2 cup, Carrot, Chopped to Long Slits
1-1/4 cups, Cabbage, Chopped
8 Oz/ 225 gms, Mushrooms, Chopped in Thick Pieces
4-5 cups, Vegetable Stock
1 Pouch, Maggi Masala Magic / or 1 tsp Garam Masala
125-150 gms, Hakka Noodles
Salt to Taste

00:00 Intro: Lets make some Delicious Veg Soupy Noodles Nepali Thukpa using Mealthy Multipot / Instant Pot
00:11 To make Soup Sauce, Pick a mixing jar of your choice
00:20 add 1 cup, Sweet Onion, Roughly Chopped
00:25 add 1/2 cup, Tomatoes, Roughly Chopped
00:28 add 1 piece, Thai Red / Green Chilli
00:31 add 1/2 inch Ginger, 6 cloves of Garic
00:34 add 2 tbsp, Tomato Ketchup
00:39 add 2 tbsp, Soy Sauce
00:43 add 2 tbsp, White Vinegar
00:48 add 1/4 tsp, Black Pepper Powder
00:52 add Handful of Cilantro
00:57 Grind to fine paste using a mixer
01:03 In your electric pressure cooker, Select Saute Mode, Medium, allow pot to heat up …
01:13 add 2 tsp, Cooking Oil to the pot, allow oil to heat up
01:19 add 1/2 cup, Spring Onion, Whites, Chopped
01:24 add 1/2 cup, Green Peppers, Chopped
01:31 add 1/2 cup, Carrot, Chopped to Long Slits
01:37 add 1-1/4 cups, Cabbage, Chopped and saute well for sometime
01:56 add Soup Paste ( Made in Step 1 ) & Saute well for sometime
02:12 add 8 Oz/ 225 gms, Mushrooms, Chopped in Thick Pieces
02:22 add 4 cups, Vegetable Stock, I am using fresh homemade vegetable stock (https://youtu.be/J8-793ZAPOc), you can use ready to use stock of you prefer
02:34 add 1 Pouch, Maggi Masala Magic, You can replace Maggi Masala with 1 tsp, Kitchen King / Garam Masala & stil well
02:52 add 125-150 gms, Hakka Noodles
02:58 Cancel Saute Mode, Medium, Close lid; for Instant pot & Multipot 1 adjust valve in Sealing mode
03:13 Select Pressure Cook Mode, High Pressure, Adjust Timer for 4 minutes, for Multipot 2 set Pressure Release mode to Natural Pressure Release
03:26 After cooktime allow Natural Pressure Release for 5 minutes
03:31 Instant Pot / Multipot 1: Turn Pressure control valve to venting mode, Multipot 2: Press Cancel and Long press Pressure Release button
03:39 Open lid after pressure valve falls down
03:44 adjust Salt to taste
03:51 Add more stock to adjust level thickness of soup, I needed 1 cup of stock to achieve my preferance of thickness
03:59 I chose to not split noodles into small pieces to retain long strands after cooking, you can choose to cut noodles in small pieces before cooking to get small strands of noodles in soup after cooking.
