This Navratri try out this Vegan Tapioca pudding with this simple dump and go recipe which is light yet rich.
Kids love it and it so easy to make too.
Want to make it paleo then just skip the sugar, it will still be as yummy as the sugar version, because of the natural sugars in coconut milk.
2 cups, Water
3/4 cup, Sugar
1 pinch, Salt
2/3 cup, Tapioca, Soaked for 2 hours in 2-3 cups of water
1 cup, Coconut Milk
1/2 tsp, Cardamom Powder
00:00 Intro Today we are going to make Tapioca Pearl Pudding
00:24 Select the Saute mode of your electric pressure cooker
00:42 Add 2 cups of Water
00:49 Let the water simmer for a while ( about 5 mins until it get Luke warm )
01:07 Once the water is warm let’s go ahead and add 3/4 cup of cane sugar to it
01:17 Add a pinch of salt
01:24 Give it a quick stir
01:31 Add 2/3 cup of Tapioca Pearls soaked in warm water for a couple of hours

01:52 Close the lid of the pressure cooker adjust the valve to sealing mode
02:08 Set pressure cook to high for 5 minutes
02:23 After the cook time is done please wait natural pressure release and then open the lid
02:38 Add 1/2 teaspoon of Cardamom powder and give it a quick stir
02:46 Consistency of the pudding is thinner when it’s hot, we want to let it cool down
02:50 Closed the lid and wait until it cools down for at least 30 minutes
